Introduction
Glycyrrhizic acid is odorless, has a special sweetness, and is about 200 times sweeter than sucrose. It is sweet after a long time, but it stays sweet for a long time. It is difficult to dissolve in cold water, easily soluble in hot water, and insoluble in oils and fats. Its hot water solution becomes viscous and jelly-like after cooling. Soluble in propylene glycol.
Source
Glycyrrhizic acid is extracted from licorice root, also known as dipotassium glycyrrhizinate, and its chemical name is 2-(3-propyleneoxy-4-hydroxyphenylacetic acid)-18β-ster-11-ene-3β,20α-diol dipotassium salt.
Application areas
The application ratio of glycyrrhizic acid in various industries is as follows: 26% for medical cosmetics, 70% for food, and 4% for cigarettes and others. In food:
1.Soy sauce: In addition to improving the saltiness to enhance the inherent taste of soy sauce, glycyrrhizic acid can also eliminate the bitterness of saccharin and has a synergistic effect on chemical flavoring agents. 2. Pickles: In the brine method of pickling pickles with saccharin, the bitterness of saccharin can be eliminated. In the pickling process, the shortcomings of fermentation failure, discoloration, and hardening caused by less sugar can be overcome. 3. Seasoning: This product can be added with pickling seasoning liquid, seasoning powder or temporary seasoning during diet to increase sweetness and reduce the strange taste of other chemical flavoring agents. 4. Bean paste: pickled herring can be made sweeter and taste more even.
In pharmaceutical cosmetics:
1.Glycyrrhizic acid is a natural surfactant, and its aqueous solution has weak foaming properties.
2. It has AGTH-like biological activity, strong antibacterial and anti-inflammatory functions, and is often used to treat mucosal diseases. It can prevent caries and angular ulcers in oral hygiene products.
3. It has a wide range of compatibility. When used in skin care products, it can enhance the efficacy of other active ingredients in sun protection, whitening, antipruritic, conditioning, and scar healing.
4. It can be used as a compound with aescin, aescin, etc., and used as a high-efficiency antiperspirant.
